Chicken Tortilla Soup

This is probably my favorite soup. I make it with chicken broth, shredded chicken, salsa, peppers, and onions. I usually serve it with Frito or tortilla chips. I usually make a pretty big pot of this soup.

1 small onion, finely chopped
1 teaspoon minced garlic
2 tablespoons butter

Sauté the above until tender.

1 quart chicken broth (or three 10.5 ounce cans)
1/2 cup chopped green peppers
3 cups cooked and shredded chicken breast
1 tablespoon lime juice
1 teaspoon cumin
¼ cup chopped cilantro
1 pint (16 ounces) picante sauce
1/4 teaspoon pepper

Add the above ingredients. Bring to a boil. Reduce heat and simmer for 20 minutes. Stir occasionally.


flour tortillas
sea salt
sour cream
shredded cheese

Cut several flour tortillas into narrow strips and fry in hot oil until slightly brown. Drain on paper and sprinkle with sea salt. (Use small sauce pan with about an inch of oil, heated on burner.)
Serve soup with tortilla strips, sour cream, and shredded cheese if you wish.
