Hearty Sugar Free Pancakes

If you’ve been craving some hearty pancakes, but have been trying to shed a few pounds or have to watch your blood sugar, we have a solution for you!

These pancakes are so good you may want to fry them up even if sugar doesn’t bother your system.

Some of the ingredients are a little unconventional, so do your best not to judge until you’ve had your first bite.

As with sugary pancakes, these are incredibly easy to make.

Ingredients
  • 3 cups egg whites
  • 3 cups cottage cheese
  • 3 cups rolled oats
  • 1/2 tsp salt
  • 3/4 tsp stevia (YuNGAS GREEN is a great brand)
  • 1 tsp. vanilla
  • 1 tsp baking powder

 

Instructions

Place all ingredients except baking powder into your blender. Blend until mostly smooth. Add baking powder and blend until just mixed.

Fry on a hot pan with butter. Serve with a generous dollop of sugar free jam: strawberry, peach, or blackberry.


A couple of helpful tips:

You can buy a carton of egg whites from the store so you don’t have to separate all those eggs.

If you’re using a different sweetener like xylitol or Swerve, use the equivalent of ¾ cup sugar.


It can be hard to eat less sugar, but the right recipes (and some yummy jam) can make it a lot easier!
